Ingredients
Scale
- 12 oz spaghetti pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved (optional)
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated Parmesan cheese
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- ½ tsp Italian seasoning
- 1 tbsp fresh parsley, chopped (for garnish)
- ½ lemon, juiced
Instructions
- Cook the spaghetti: Boil in salted water according to package instructions until al dente. Drain and set aside.
- Cook the shrimp: In a skillet over medium heat, heat olive oil. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
- Prepare the sauce: Melt butter in the same skillet, add garlic, and sauté for 1 minute. Add cherry tomatoes (if using) and cook for 2 minutes.
- Make it creamy: Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer. Stir in Parmesan cheese, salt, black pepper, red pepper flakes, and Italian seasoning until smooth.
- Combine ingredients: Return the shrimp to the sauce, then add the cooked spaghetti. Toss everything together until well coated.
- Final touch: Squeeze fresh lemon juice over the pasta, garnish with parsley, and serve hot.
Notes
- For a lighter version, substitute heavy cream with half-and-half or Greek yogurt.
- Add spinach or mushrooms for extra flavor and nutrients.
- Use linguine or fettuccine instead of spaghetti if preferred.
- For a spicy kick, increase the red pepper flakes.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth or milk to maintain creaminess.
