St. Patrick's Day Jello Parfait

Layers of jiggly, jiggly fun! This colorful parfait is a festive and easy St. Patrick's Day treat!

Ingredients
  

  • 1 box (3 oz) lime gelatin
  • 1 box (3 oz) lemon gelatin
  • 1 box (3 oz) blue raspberry gelatin
  • hot water as needed per package instructions
  • cold water use half the amount specified on package
  • whipped cream for topping
  • gold sprinkles optional, for garnish
  • rainbow candies optional, for garnish

Instructions
 

  • In separate bowls, prepare each flavor of gelatin according to package directions, using half the amount of cold water called for. This will make the gelatin firmer.
  • Pour each flavor into a separate 8x8 inch pan. Refrigerate for at least 3 hours, or until firm.
  • Once firm, cut the gelatin into cubes.
  • In parfait glasses or clear cups, layer the gelatin cubes, alternating flavors and colors.
  • Top with whipped cream.
  • Garnish with gold sprinkles and rainbow candies, if desired.
  • Serve immediately.

Notes

For a fun twist, try using other gelatin flavors to create different color combinations. Keep refrigerated until ready to serve. These parfaits are best enjoyed fresh but can be stored in the refrigerator for up to a day.
